This popular seasoning is used in Indian and Hispanic cuisine for it's slightly bitter, unique taste and brick red color. It is used in many foods including: meats (especially stews), seafood, rice dishes and tamales. Annatto is a good companion to pepper, coriander, allspice, and cinnamon.
Annatto is made from the seeds of the achiote tree. The achiote tree is thought to have originated around the area of Brazil. The use of annatto then spread out through Latin America and the Caribbean to the rest of the world. The seeds are usually ground into a powder or paste before being used for cooking. Annatto is now widely used in many processed foods for it's natural rich red coloring. When used in smaller amounts, it will give foods a natural yellow or orange color.
