A pinch of Epazote will give authentic Mexican flavor to beans, soups, moles and tomato sauces. It goes especially well with black beans and is an important ingredient in the sauce for chilaquiles.
It is native to South and Central American and southern Mexico. Epazote has a similar flavor and aroma to oregano, anise, fennel and tarragon except much stronger.
