Caraway is also known as meridian fennel or Persian cumin. This aromatic, spicy seed has been used in cooking for about 5,000 years. While it is called caraway seed, it is actually the fruit of the plant. The fruit has a similar flavor to anise and is an important ingredient in rye bread.
Europeans, especially Germans, use caraway for sauerkraut, cabbage, sausages and rich meats like duck, goose, and pork. In Serbia it is sprinkled over scones and used to season cheese. In the Middle East, caraway is used to season pudding and add flavor to chili paste. Many people believe this spice reduces flatulence and aids digestion. It is also used as a breath freshener!
