A pinch of Epazote will give authentic Mexican flavor to beans, soups, moles and tomato sauces. It goes especially well with black beans and is an important ingredient in the sauce for chilaquiles. People in Mexico sometimes use this herb to reduce gas and to help cleanse the body of parasites.
Epazote is also known as wormseed, Jesuit's tea, Mexican tea, payqu and herba sancti Mariæ. It is native to South and Central American and southern Mexico. Epazote has a similar flavor and aroma to oregano, anise, fennel and tarragon except much stronger.
