New Mexico chilies were developed in the late 1800's by the horticulturist Dr. Fabián Garcia at New Mexico State University. Released to the public in 1913, these chilies have become a staple in Southwestern and Mexican cooking.
Ground New Mexico chili creates a spicy hot flavor and brings a wonderful red color to goulash, stews and many exotic dishes. There are many varieties of this chili and they can range anywhere from 0 to 70,000 units on the Scoville scale.
