The Ancho (also known as Pablano) is probably the most popular dried chili in Mexican Cuisine. When dried it becomes brownish red with a mild, deliciously rich, almost smoky flavor that will create a special taste in numerous dishes including Mole. When used as a fresh green chili it can be stuffed to make chile relleno. The Ancho is considered to be a mild chili and is rated around 1,000 to 1,500 units on the Scoville scale.
