Chili California is a very mild chili, it enhances flavors and creates the beautiful red color in many Mexican Dishes.  These chilies are also known as Anaheim chilies and are a variety of New Mexico chili. A farmer named Emilio Ortega brought the New Mexico chili seeds to Anaheim, California around 1894! This chili pepper is rated around 500 to 1000 units on the Scoville scale.
