The most traditional recipe for paella is made with olive oil, white rice, green beans, chicken and/or rabbit, white beans, snails, spices and sometimes artichoke. (depending on the season) Valencians believe that if the dish is made differently it is no longer paella. There are countless interpretations of this tasty dish in Spain and the rest of the world but the one ingredient they all have in common is olive oil.
